Faithful Asparagus

Jeremiah 29:5 Build houses and live in them; plant gardens and eat their produce.

God doesn’t mention asparagus in the Bible. It could be an example of faithfulness in my mind. My bed was totally neglected last year, all throughout the drought. No extra water, no weeding, no fertilizing. It was a terrible mess. But it came to life like it always does and is giving us a delicious crop this Spring. What an incredible vegetable (except for one side effect…)! I am trying to get the weeds under control as I cut each handful in the cool of the morning. This year I plan to treat this bed of tastiness with great care.

Asparagus Pasta

I’m going to share with you one of the best things I think I do with fresh asparagus.  Perhaps you will try it!

You will need:

1 pound (or more) of fresh asparagus

6 TBSP olive oil

6-8 cloves of fresh garlic

8-12 oz. of side cut bacon (or thick cut or prosciutto)

feta cheese

toasted pine nuts

angel hair pasta

Enjoy!

Wash and cut your asparagus into 3 inch pieces.  Add to olive oil in a saucier or a pan which you can cover and saute/steam.  Steam on medium low until starting to  soften.  Add garlic and continue to steam/fry.  In another pan, add chopped bacon and fry until just starting to brown.  Add it to the asparagus and garlic mixture and lightly brown.  Serve over angel hair pasta with feta cheese and topped with toasted pine nuts.  Add more olive oil on top if you like!

  1. This looks delicious! I must try! Many, many years ago, I tried time after time to start asparagus in my garden. It was always a failure! I’ll have to get some tips from you how to do this. Thanks for the recipes and pictures. So helpful!
